Ingredients:

- 3 zucchini (courgette), medium sized
- 1-2 tablespoons olive oil
- Salt and pepper to taste
- 1-2 tablespoons pesto (optional)
Method:
- Wash and cut both ends off the zucchini.
- Then either cut length ways into long thin noodles or use a Julienne peeler to do the hard work for you.
- Lightly sauté zucchini noodles in olive oil on a medium heat.
- Add salt and pepper to taste and serve. You can also add pesto before serving.
- Alternatively serve them raw with a warm pasta sauce over top.
