2 cups cubed granny smith apples
1 cup chopped celery
½ cup chopped walnuts
½ cup mayonnaise
¼ cup plain unsweetened yogurt
1 Tbsp raw honey
1 Tbsp lemon juice
Salt and pepper to taste
1. Wash and cube the apples with the skin on. Place them in a large mixing bowl.
2. Add the chopped celery, and chopped nuts to the bowl.
3. In another small bowl, whisk together the mayonnaise, yogurt, honey, lemon juice, salt, and pepper until well combined.
4. Pour the dressing over the apple mixture and mix together until everything is evenly coated with the dressing.
5. Taste the salad and adjust the seasoning if needed. You can add more honey if you prefer it sweeter or more lemon juice for tanginess.
6. Store the salad in the refrigerator for at least 30 minutes before serving to let the flavors blend.
