
Ingredients:
- Olive or coconut oil
- 200g kumara, peeled and diced to 1cm pieces
- 120g green beans, trimmed, halved
- ½ cup frozen peas or sweet corn
- 1 medium red onion, chopped
- 1 medium zucchini, sliced thinly
- 1 medium tomato, chopped
- 2 tablespoons fresh parsley finely chopped
- ½ cup milk (or rice/coconut/almond/oat milk)
- 4 eggs, lightly whisked
- Salt and pepper to season
Method:
- Preheat oven to 180°C.
- Grease and line a 20cm deep baking dish
- Heat olive oil over a medium heat in a frying pan and lightly cook kumara for 3-5 minutes.
- Add the beans, peas/corn, onion and zucchini. Cook for another 3 minutes or until tender.
- Combine all vegetables and egg mixture in a large bowl. Once well mixed, season with salt and pepper.
- Pour into baking dish and cook for 45 minutes or until cooked through.
- Let stand for a several minutes before cutting or taking out of the baking dish.
