INGREDIENTS
4 C heavy cream
4 tsp gelatin
¼ - ½ C maple syrup, honey, or coconut sap sugar as sweetener
1 Tbsp vanilla extract

METHOD
- Soften the gelatin in 1 cup of cold cream for 5 minutes, then very gently warm the mixture to fully dissolve.
- Add the rest of the ingredients, pour into ramekins or small bowls, cover with plastic wrap and chill till firm, about 2-3 hours.
- Top with berries, sliced or puréed fruit, jam, or whatever your heart desires. Yum!
Variation: You can add 2 egg yolks, beaten well with the cream, to the cold ingredients before blending with the warm.
