Summer Fruit Salad with Mint Lime post

Ingredients:


1 cup peaches, cubed
1 cup fresh blueberries
1 cup plums, cubed
1 cup fresh pineapple, cubed
1 cup watermelon, cubed
1 cup nectarines, cubed
2 limes
2 Tbsp fresh mint leaves, chopped

Method:


  1. Combine the fruit in a large bowl.
  2. Juice the limes and to the juice add a teaspoon of lime rind.
  3. Mix the chopped mint into the juice juice and mix well.
  4. Pour lime and mint over the fruit salad and leave covered in the fridge for an hour before serving. Give salad a good mix before serving to redistribute lime and mint.

Optional: Garnish with mint sprigs.
