
Ingredients
250g frozen (pre-cooked) shelled edamame, thawed
¼ C tahini
4 Tbsp lemon juice
2 cloves garlic, minced
¼ C extra virgin olive oil
1 tsp ground cumin
½ tsp smoked paprika
¼ tsp cayenne pepper (adjust to taste)
Salt and black pepper to taste
Vegetable sticks for serving (carrots, celery, cucumber, etc.)
Method
1. Drain the thawed edamame and pat dry with paper towels
2. In a food processor, combine the edamame, tahini, lemon juice, garlic, cumin, smoked paprika, and cayenne pepper. Pulse until coarsely chopped.
3. With the food processor running, slowly drizzle in the olive oil until the mixture reaches your desired consistency.
4. Season with salt and pepper to taste.
5. Serve immediately with your favorite vegetable sticks, or store in an airtight container in the refrigerator for up to 3 days.
