
Ingredients per salmon parcel (serves 1)
**Multiply the ingredients by the number of people you're cooking for.- 1 piece fresh salmon
- 4 cherry tomatoes, halved
- Sprinkle of finely sliced spring onions
- 1/4 small courgette, sliced
- 2-3 leaves fresh coriander (or basil if you prefer)
- 1 tsp fresh lemon juice
- Sprinkle of salt
- Tin foil square large enough to wrap salmon and other ingredients
Method
Remove salmon skin if desired and place into centre of tin foil square. Arrange tomatoes and courgette slices around the sides of the salmon. Add lemon juice over the salmon and then sprinkle spring onions and salt and pepper on top. Lastly place coriander leaves onto salmon and wrap tin foil closed into a parcel. Place parcels on hot BBQ plate for 5-10 minutes or until salmon is cooked through. Use fish slice to move salmon from tin foil onto individual plates.
