Roasted Asparagus & Tomatoes

INGREDIENTS



500gm fresh asparagus
1-2 Tbsp butter
1 C diced tomatoes
1 crushed garlic clove
sea salt and pepper to taste

Method

  1. Heat oven to 218 °C (425°F). Line a baking tray with baking paper
  2. Cut the ends off asparagus and place them in baking tray. Melt butter and pour over asparagus.
  3. Mix tomatoes with garlic, salt and pepper, and leave to stand for a few minutes.
  4. Spread the tomatoes over asparagus.
  5. Roast until just tender (6-8 minutes).
  6. Optional - Sprinkle with cheese such as feta
