Ingredients:

- 1 cup cooked quinoa
- 1 medium tomato, finely chopped
- 1 cup parsley, finely chopped
- 1/2 medium red onion, finely chopped
- 2 tablespoons extra virgin olive oil
- Juice from 2 lemons
- Sea salt to taste
Method:
- In a large bowl mix the cooked quinoa, tomato, red onion and parsley.
- Mix in the olive oil and lemon juice and add salt to taste.
