- Eggplant - 1cm ring slices OR
- Kamo Kamo (Maori squash) - 1cm ring slices OR
- Marrow - 1cm ring slices
- Tomato Paste
- Grated Cheese
- Other toppings of your choice such as fresh basil, chopped ham or salami, chopped mushrooms...
These are a vegetable-based breadless pizza! Quick & easy to prepare and then bake in the oven.
With your choice of base (Eggplant, Kamu Kamu or Marrow rounds), layer these onto a baking tray. Smear some tomato paste over each round and then top with grated cheese and basil or other herbs of your choice. You may like to add some sliced mushrooms or salami too! Pepper and salt to taste.
Place tray in oven and bake for 10-15 mins, until cheese is melted and golden.
