Roasting Vegetables for a Frittata
Preheat your oven to 200°C. Cut your leftover vegetables into even-sized pieces to ensure they cook uniformly. Toss them with olive oil, salt, and your favorite herbs like rosemary or thyme. Spread them on a baking sheet in a single layer and roast for about 20-25 minutes, until they are caramelised and tender. Once done, add them to your frittata mixture.

Fried Rice
Heat a tablespoon of oil in a large frying pan over medium-high heat. Add chopped onions and cook until translucent, about 2-3 minutes. Stir in minced garlic and cook for another minute. Increase the heat to high, add the leftover rice, and cook, stirring frequently, until the rice is heated through. Push the rice to the side of the skillet, add a bit more oil, and pour in beaten eggs. Scramble the eggs until set and then mix with the rice. Add your protein (shrimp, chicken, or tofu), cook until heated through, and then finish with a splash of soy sauce, sesame oil and a sprinkle of spring onions.

Potato Cakes
Take your leftover mashed potatoes and mix in an egg to bind them, which helps the cakes hold their shape. Stir in some chopped onions, spinach or chives for extra flavor. If the mixture feels too wet, add a few tablespoons of flour to help firm it up. Shape the mixture into patties and fry in a hot pan with a little butter until each side is golden brown and crispy.
