2-3 Tbsp coconut or olive oil
1 medium brown onion, finely chopped
3 garlic cloves, finely chopped
1 tsp ground cumin
600g lamb mince
150g lamb or pork fat, minced
1 Tbsp fresh mint
1 Tbsp rosemary leaves, finely chopped
2 eggs, lightly beaten
1. Add 1 tablespoon coconut oil to a frying pan on a medium heat and sautee the onions for about 5 mintutes. Then add the garlic and cumin and cook for another minute and put this aside to cool down.
2. In a large bowl mix the lamb mince, lamb/pork fat, herbs, beaten egg, onion mixture and salt and pepper to taste to combine evenly. Form into eight patties.
3. Heat the rest of the coconut oil in the frying pan on a medium heat. Cook the patties for about 3 minutes on each side (or until they are browned and cooked through).
4. Serve with salad and Tzatziki
