½ cup walnuts, chopped
½ cup almond slices or whole almond chopped
½ cup macadamia nuts, chopped
½ cup coconut flakes (plain, unsweetened)
⅓ cup raw cashew halves, or whole cashews chopped
¼ cup raisins or sultanas
1 tsp cinnamon, ground
½ tsp sea salt
½ cup honey
¼ cup coconut oil
1 tsp vanilla essence
1. Preheat oven to 150 °C (300 °F) and line a baking tray with baking paper.
2. In a large bowl, combine all the nuts and dried fruit with the cinnamon and salt.
3. In a small steel bowl, combine the coconut oil, honey and vanilla essence and heat in a pot of boiling water until it can be well combined.
4. Pour the liquid over the nut mixture in the large bowl and stir until everything is well mixed and coated.
5. Spread over the baking tray and bake for about 20 mins, or until light brown and crispy.
6. Once removed from the oven, allow the granola to cool on the baking tray for about 10 mins before gently breaking up the granola. Leave to cool completely before storing in an airtight container. Can be stored for up to 6 months.
