This truly is the easiest and quickest loaf to make. You literally throw all the ingredients into your blender and boom - ready to bake!
This loaf is very moist and naturally sweet, filled with fruit. Its gluten and refined sugar free, so therefore guilt free. A lovely addition to a cup of tea, in a packed lunch, or just because its treat time.
Ingredients:
3 ripe medium bananas
150g stone-less dates, roughly chopped
75g butter cubed (room temperature - you can substitute coconut oil or similar if you are dairy free)
50g maple syrup or honey (optional because this loaf is naturally quite sweet)
3 eggs
3 tsp lemon juice
1 tsp vanilla paste or extract
1 tsp ground cinnamon
1 tsp ground allspice
250g buckwheat flour
pinch of salt
2 tsp baking powder
100ml hot water
200g sultanas (or raisins)
Instructions:
Pre-heat oven to 180 degrees and line loaf tin with grease proof baking paper
Add all of the ingredients in order into a blender
Blitz all the ingredients together in a blender (except for the raisins), blend for about 30 seconds, until well combined.
Fold in the raisins by hand at the end of the mixing process until evenly distributed throughout the mixture.
Pour the mixture into the lined loaf tin and cook for approximately 45 min to 1 hour
OR until a skewer inserted into the middle of the loaf comes out clean
Remove from tin and cool on a wire rack
