Ingredients:

- 3 cups fresh, canned or defrosted corn kernels
- 2 eggs
- ½ tsp curry powder
- ½ tsp baking soda
- ½ cup rice flour
- 1 spring onion, finely chopped
- Sprinkle of chilli flakes (optional)
- Salt & pepper to taste
- Olive oil or coconut oil to fry
Method:
- If you are using raw corn kernels, place in a pot and cover with boiling water and stand for 3 minutes before draining.
- Place half the corn in a food processor.
- Add eggs, spring onion and blend to a rough puree.
- Add chilli, curry, soda, rice flour, salt/pepper and pulse until the mixture is a batter.
- Stir in the remaining corn.
- Heat oil in a frying pan and add heaped tablespoon dollops of mixture to pan cooking over medium heat.
- Cook until golden brown and cooked through (this should take about 2-3 mins each side).
Great served with an Avocado Salsa!
