1 can full-fat coconut milk (chilled overnight)
2 to 4 tbsp raw cacao powder (adjust to taste)
2 scoops collagen peptides
2 tsp cinnamon
Optional: fresh berries for topping
Method
Makes 2 servings
1. Chill the coconut milk in the fridge overnight. Then, open the can from the bottom and scoop out the thick cream into a bowl. Save the remaining liquid for other uses like smoothies.
2. Add cacao powder, collagen peptides, and cinnamon to the coconut cream.
3. Whip everything together using a hand mixer or stand mixer for about 5 to 8 minutes until fluffy.
4. Let the mousse set in the fridge for at least 20 minutes; for best results, leave it overnight.
5. Serve in bowls, optionally topped with fresh berries.
Note:
You can enjoy this mousse on its own, with berries, or as a filling for pastries.
