Chia Cinnamon Porridge

Ingredients

2 C coconut milk or other milk
1 Tbsp honey, plus more to serve if desired
1 tsp vanilla essence
1/2 tsp ground cinnamon
1/2 C blueberries or other berries (can be frozen)

Method


  1. Mix the chia seeds milk, honey and cinnamon and bring to a simmer over a medium heat. Also add the berries at this stage if they are frozen.
  2. Cover, turn to low and simmer for another 5 minutes or until it's light and fluffy. Make sure you stir from time to time to avoid sticking.
  3. Add the berries and extra honey if desired and serve. Other fruit such as banana slices can also be added when serving.
