Ingredients

2 C coconut milk or other milk
1 Tbsp honey, plus more to serve if desired
1 tsp vanilla essence
1/2 tsp ground cinnamon
1/2 C blueberries or other berries (can be frozen)
Method
- Mix the chia seeds milk, honey and cinnamon and bring to a simmer over a medium heat. Also add the berries at this stage if they are frozen.
- Cover, turn to low and simmer for another 5 minutes or until it's light and fluffy. Make sure you stir from time to time to avoid sticking.
- Add the berries and extra honey if desired and serve. Other fruit such as banana slices can also be added when serving.
