Ingredients:
- ½ cup milk (dairy-free alternative can be used if preferred)
- 1-2 eggs lightly beaten (depending on consistency of mixture)
- 2 cups of grated cheese
- 1 cup self-raising flour (gluten free flour can be used if preferred)
- 3 bacon rashers diced OR finely chopped large handful of spinach as a vegetarian alternative
- 1 onion finely diced
Method:
- Preheat oven to 200°C.
- Combine egg and milk in a large bowl.
- Add remaining ingredients and mix well.
- Line a baking tray with baking paper and drop large teaspoons of the mixture onto the tray.
- Place into oven and bake for about 20 minutes or until slightly golden on top.
These are super easy and fast to make, a great after-school snack or lunch box addition. Or would be lovely alongside a hot home-made soup!
