
Ingredients
1 Tbsp Olive Oil
1 Onion chopped
1 tsp Crushed Garlic
1 tsp Dried Thyme
½ tsp Dried Rosemary
1 Large Head Cauliflower Chopped
2 C Vegetable Stock
400ml Tinned Coconut Milk
Salt and Pepper To Taste
Method
- Add the olive oil, onion, garlic, thyme and rosemary to a pot and sauté until the onions are softened
- Add the cauliflower and mix together. Then add in the vegetable stock and coconut milk. Bring to the boil Reduce heat, cover and simmer until the cauliflower is softened
- Blend with a stick blender until smooth. (Or, transfer to a blender jug in stages and blend until smooth then return to the pot.)
- Add salt and pepper to taste
- Serve with a sprinkle of ground black pepper and a sprig of fresh thyme
