If you're pressed for time, this dish is a quick fix, taking only 15 minutes and using just four ingredients. For an extra touch, consider mixing in some fresh spinach or sprinkling chopped basil on top. Great paired with a crusty baguette slathered in butter! Or goes well with sausages.


Ingredients


465g jar roasted peppers

2x 400g can butter beans

200g block of feta

1 garlic clove, peeled


Method


Instructions


1. In a powerful blender (like a Nutribullet), purée the roasted peppers, feta, and garlic clove. Add a splash of water if needed to achieve a smooth consistency.

2. Transfer the blend to a large pan and set it over a low-medium heat. Toss in the butter beans and stir until everything is warm and well combined. And just like that, you’re done!
