
Ingredients:
2 small brown onions, finely chopped
2 carrots, chopped
2 sticks celery, sliced
2 Yellow capsicums, chopped
2 garlic cloves, finely chopped
500g beef mince
1 can (400g) red kidney beans, drained and rinsed
1 can (400g) chopped tomatoes
1 Tbsp tomato paste
1 tsp chilli powder
1 tsp ground cinnamon
1 tsp ground cumin
Salt and pepper to taste
2 Tbsp olive oil
1 Tbsp apple cider vinegar
For garnish: Choose from sour cream, plain yoghurt, grated cheese or fresh herbs (parsley or coriander)
Method:
- Heat olive oil in a large fry pan over a medium heat. Add the onion and garlic and sautee for several minutes or until softened. 2). Add the other vegetables, the spices and salt and pepper. Cook for a further few minutes or until vegetables soften.
- Add the mince and break up with a wooden spoon. Once slightly browned, add the tomatoes, beans, tomato paste and vinegar. Cover and simmer for 30-40 mins or until it has thickened. Make sure you stir it from time to during.
- Now you can prepare your rice, quinoa or other additions to the meal.
Serve with rice, quinoa or in a burrito. Top with your choice of sour cream, plain yoghurt, grated cheese or freshly chopped parsley or coriander.
