Banana Buckwheat Bread

Ingredients


Dry Ingredients:

1.5 C buckwheat flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt

Wet Ingredients:

2 eggs or two flax eggs
1/3 C melted coconut oil + extra for greasing
3 ripe bananas
1/3 C almond milk
1/4 C maple syrup or honey
1 tsp vanilla extract

Method


  1. Preheat the oven to 180 degrees celsius (360f)
  2. Grease a loaf tin with butter or coconut oil
  3. Mash bananas in a large bowl
  4. Add whisked eggs to the banana
  5. Add the remaining wet ingredients and mix well
  6. In a separate bowl, mix together the dry ingredients
  7. Slowly fold the dry ingredients in to the wet ingredients
  8. Optional extras (chopped nuts, chocolate chips etc) can be added now
  9. Pour in to the greased tin
  10. Bake for 30-40 minutes until a skewer inserted comes out clean
  11. Allow to cool before slicing and serving


NOTES:To make a flax egg: mix 1 tbsp ground flax seed with 3 tbsp water and allow to sit for 5 minutes to thicken.
Store in an airtight container for up to 4 days. Freezes well as slices in a ziploc bag.
