Almond Flour Biscuits

INGREDIENTS:

2 cups almond flour
1 egg
2 Tbsp grated cheese (parmesan is best)
1/2 tsp salt
*Additional herbs or spices of your choice


METHOD:



  1. Preheat oven to 180 degrees C fan or 200 degrees C regular (356 F fanbake or 392 F regular).
  2. Put almond meal, egg, cheese, salt and any other seasonings into a food processor and pulse until a dough forms. Alternatively mix very well by hand to form the dough.
  3. Place dough onto a sheet of baking paper the size of your baking tray and flatten the dough out, then place another sheet of baking paper on top and roll the dough out to a thickness of 5mm or slightly thinner.
  4. Peel off the top layer of baking paper and cut the dough into your preferred cracker sizes or you can leave and simply break into irregular peices once baked.
  5. Place the baking paper with the rolled out dough on a baking tray and bake for 8-15mins or until they are golden and crispy.
  6. Leave to cool on a cooling rack and once cooled, snap the scored lines into individual crackers/biscuits.
  7. Let them cool completely before putting them in an airtight container for storage.
